ZUCCHINI BREAD

INGREDIENTS

  • 1 1/2 cups Essential Everyday No Calorie Sweetener With Sucralose
  • 2/3 cup Essential Everyday Unsweetened Apple Sauce
  • 1/2 cup water
  • 1/3 cup Essential Everyday Pure Vegetable Oil
  • 3 large eggs
  • 1 teaspoon Essential Everyday Pure Vanilla Extract
  • 3 cups Essential Everyday All-purpose Flour
  • 3/4 cup Essential Everyday Instant Nonfat Dry Milk
  • 1 tablespoon Essential Everyday Ground Cinnamon
  • 1 3/4 teaspoons Essential Everyday Baking Soda
  • 1 teaspoon Essential Everyday Salt
  • 1 teaspoon baking powder
  • 2 cups grated zucchini

DIRECTIONS

In large mixing bowl, combine sugar, apple sauce, water, oil, eggs and vanilla. Using an electric mixer on medium speed, beat until well combined.

Add flour, dry milk, cinnamon, baking soda, salt and baking powder. Continue mixing until well combined, scrapping sides of bowl with a rubber spatula.

Add zucchini; continue mixing until well combined. Transfer to a greased 9x5-inch loaf pan.

Bake in a preheated 325°F oven 60-70 minutes or until toothpick inserted in center comes out clean. Remove from pan and cool completely on cooling rack.
