JAMAICAN JERK BEEF KABOBS

INGREDIENTS

  • 1 (1 1/2 pound) boneless sirloin steak
  • 1 red bell pepper cut into chunks
  • 1 12 ounce bottle Jamaican-style jerk marinade & cooking sauce
  • 2 ripe plantains cut into chunks
  • 8 bamboo skewers soaked in water 30 minutes
  • 1 8 ounce package dirty rice mix

DIRECTIONS

Trim fat off steak; cut into 1 ¼-inch cubes. Place steak, peppers and 1 cup marinate into a recloseable food storage bag; seal. Toss to coat. Place in refrigerator and marinate a minimum of 45 minutes or up to overnight.

Prepare grill to medium heat. Thread beef, peppers and plantains on to skewers in desired pattern (approximately 3 beef, 3 peppers and 2 plantains per skewer). Discard bag with marinade (do not use this marinade to brush during grilling).

Prepare rice mixture according to package directions.

Meanwhile, place skewers on grill. Grill, turning occasionally, 7-9 minutes or until desired doneness is reached (145°F for medium-rare; 160°F for medium). Brush with remaining marinade during grilling.

Remove from grill. Serve kabobs over cooked rice.
