SAUTÉED COD

INGREDIENTS

  • 8 ounces Arctic Shores Frozen Cod Fillets thawed
  • 1 teaspoon Italian seasoning divided
  • 2 tablespoons olive oil
  • 1/4 cup crispy Panko style plain bread crumbs
  • 1 plum tomato seeded and chopped
  • 1 tablespoon chopped Italian flat-leaf parsley
  • 2 teaspoons capers rinsed
  • 1 teaspoon chopped garlic

DIRECTIONS

Sprinkle fish with ½ teaspoon Italian seasonings; salt and pepper to taste.

In medium skillet, heat oil over medium heat. Add fish; cook, turning once, until cooked through and fish flakes easily with a fork (about 10 minutes per inch of thickness).

Remove fish from pan; keep warm. Add bread crumbs, tomatoes, parsley, capers, garlic and remaining ½ teaspoon Italian seasonings to pan; salt and pepper to taste. Sauté until warmed through. Serve over fish.
