CARROT RAISIN SALAD
with Apples & Coconut

- 2 cups shredded carrots
- 1 cup diced apples
- 1/2 cup diced celery
- 1/2 cup Essential Everyday Raisins
- 1/2 cup Essential Everyday Chopped Walnuts
- 1/2 cup Essential Everyday Sweetened Coconut Flakes
- 3/4 cup Essential Everyday Nonfat Plain Greek Yogurt
- - juice of 1/2 a lime
- 1 teaspoon lime zest
- 1/2 teaspoon Essential Everyday Ground Cinnamon
- 1/2 teaspoon ground coriander
In large bowl, combine carrots, apples, celery, raisins, walnuts and coconut; set aside.
In small bowl, combine remaining ingredients; salt and pepper to taste. Add to carrot mixture. Toss to coat.
Keep refrigerated until ready to serve.
